Our story

First and foremost, we are members of the McMinnville community. This shop is built for locals—for all of us who call Mac home.

At Filbert’s, we believe great ice cream starts with intention. That means:

• Everything is made in-house, in small batches. We begin with local milk and cream, then craft flavors that are both nostalgic and a little unexpected—rotating with the seasons and inspired by what’s around us.

• Non-dairy is never an afterthought. Every option is designed to stand on its own—thoughtful, full-flavored, and always worthy of being your first choice.

• Ingredients matter. We source carefully, prioritize local whenever possible, and make as much as we can from scratch.

 

This is a place for after-dinner walks, spontaneous stops, and celebrations both big and small—a place to celebrate birthdays, gather with friends, and make lasting memories. A place for kids, families, date nights, and anyone who just needs something sweet at the end of the day.
